Pounded yam or Íyàn is a Nigerian staple food, that is native to the several ethnic groups. It is a traditional meal, and is prepared by pounding boiled yam with a mortar and pestle. Poundo Iyan flour is similar to mashed potatoes but heavier. It is a smooth and tasty delicacy traditionally eaten with stews, soups or gravy.
PREPARATION:
To create a delicious and highly nutritious meal. Boil 3/4 cup of water or fresh milk in a saucepan. Add 1 tsp of Coconut Oil, 1tsp of Honey and 1/3 cup of Poundo Iyan flour; and stir well till a lump free dough is formed. Add another 1/2 cup of water to the dough, reduce the heat and cover. Leave to cook for a further 3-5 minutes. Knead the dough again until smooth and velvety. Serve hot with a stew or accompaniment of your choice.
